The space included in buildings where preparation of food occurs is known as a kitchen. Kitchens exist in residential as well as commercial buildings. Equipment such as cookers, sinks, and worktops are found in kitchens. The equipment is used to prepare food. Traditional and modern kitchens are the two types of kitchens. Traditional kitchens have a very formal and elegant look. This include the Victorian styles. They had a lot of ornamentation in terms of the style of fixtures. They had a lot of antiques that were mainly done in mahogany, cherry or walnut type of timber. They also incorporated various designs of different centuries.

After the introduction of modern materials which came as a result of industrial growth, modern kitchens came up. They were usually designed basing on the new designs thus considering the activities taking place in the kitchen. In some places like in residential buildings, the storage part can contain a fridge because food stored is little. On the other hand, in commercial buildings like big hotels, cold store is made of complete inbuilt refrigeration systems that preserve food. They are made of enough space and well arranged to enable one to pick what is needed. They are supposed to be cleaned daily to prevent germs and dirt.

It should have a sink, cooker worktops and cabinets all of this is inbuilt. For best functionality and to save on space the appliances such as microwave and ovens should also be inbuilt. The functionality of a kitchen is dependent on the work flow. Kitchens should be kept clean at all times to prevent disease. Commercial kitchens are inspected occasionally by the public health officials to ensure they are up to standard.

Cooking spaces were changed after industrial periods. There was the increase of appliances and efficiency. Aluminum and steel are examples of new appliances that were introduced into modern kitchens. Granite and marble are examples of materials that started to be used to make worktops for modern cooking spaces. Cooking process was therefore made easier and quicker. The new surfaces and appliances are now easier to clean and they also last longer than the old ones.

Open plan type of kitchens were also introduced. They were combined to living spaces. They came into existence during the modern times of architecture that involved the open plan type of system. The main objective was to make sure that there is free and flow of spaces, thus ensuring the maximization of the inside spaces.

The open-plan systems of kitchens are used in the present days because of the good experience they offer users. Their look is classy and stylish. The space inside kitchens has to enable free movement of people during food preparation and also space for the furniture. Dining space can also be included in an open plan kitchen. Islands can serve multiple purposes of being worktops as well as dining tables.
